Does anyone know if the normal buses Santiago to Sarrria operate on the national holiday Oct 12?

Yep, they do. Just go to the www.alsa.es site and you can see the schedule for that day and purchase tickets. The site is not good at connections between routes, so you need to first type in Santiago to Lugo, then Lugo to Sarria. Buen camino!
