There will still be loads of hostels open in November. Most of them in fact. There won't be that many people walking so you won't have any accommodation problems.
The weather is another matter. While you could easily see sunny, warm days you'll also probably experience long periods of rain - especially in Galicia - and possibly a bit of snow in the mountains.

I got to Santiago on November 15, so I did part of my Camino in November.
Some of the refuges were closed, and my information (my excellent Confraternity of Saint James guide and the sheet I got at the pilgrim in Saint-Jean-Pied-de-Port pilgrim office) was a little contradictory and occasionally inaccurate. I don't think it was their fault, but rather because things change from year to year. But I never actually had trouble finding a bed, although in Galicia I came across two full refugios (I got into one very small one in Cazanova before it was full, and in Triacastela there was a second refuge that wasn't full).
I'm afraid I'm not going any time soon--though I wish I could!
