Well, sir ... I am fairly certain that where you start from is not nearly so important as where you end up.
Exactly how you get there is not for me to decide. But if you take a step outside of your front door ... or back door ... or side door ... and move towards an airport that will put you into a place to pick up the Way ... you will be just fine.
RyanAir will certainly get you to a place to start. Begin there. Walk.
The Camino Frances is a good choice. Starting in St. Jean and taking 30-35 days to get to Santiago would be my recommendation.
Now if you can walk Hadrian's Wall on the Way ... that would be a good thing ! The Roman roads along the Way will be a nice connection to that trek.
Be encouraged, my brother. I suspect that however you do this, you will do it right. Let us know how it plays out !
