If you're referring to the Camino Frances the answer in most cases is 'No'. Some private hostels may allow your dog in but most public ones have a 'no dogs' policy. Very few people bring a dog precisely for this reason.
On the Via de la Plata in winter I met several people with dogs but even then (with hostels mostly emply) the dog often had to sleep outside.
As a personal observation, I don't think dogs enjoy the Camino. The first couple of days are great but after that it's obvious that they're conserving their energy and lying down to sleep every opportunity they get. Plus you will get aggressive attention from the farm dogs along the Camino so you'll have to go armed with a big stick.
